I brought leftover bourbon sweet potatoes for lunch today….it seems a little wrong. Didn’t think about the fact that they smell and taste very much like bourbon (see note below) this morning when I packed them, I just thought sweet potatoes for lunch sounded quite yummy.
Don’t tell my boss!
Note: when making bourbon sweet potatoes, do not make them the night before in hopes of easing meal prep the next day….the potatoes REALLY soaked up the alcohol. I’m pretty sure 30 minutes was not enough time to cook off the alcohol!
