I’m pretty sure I’ve posted about this before, but I have to do it again because it’s just so dang good!
I’m in love with these open face tuna melts:
It couldn’t be more simple:
Mix together 12oz of Albacore tuna with 3TBSP of mayo (Miracle Whip BAD!) and salt/pepper to taste. Toast some bread, spread with butter or mayo, top with the tuna, avocado slices, bacon, and swiss cheese. Place under a broiler until cheese is melted.
We paired it with some fresh strawberries, but I can’t wait to make it this summer with some garden fresh tomatoes and sweet corn!
