Two Thumbs Up: Meatloaf Minis
Direct from the January/February issue of Cooking Light! These meatloaf minis were quick, simple and best of all I had the ingredients on hand with a few minor substitutions…I used yellow cheddar cheese and spicy brown mustard instead of dijon. Cooking Light labeled it Kid-Friendly and I would agree, it tasted a little bit like a cheeseburger.
I had a bag of spinach so I cooked that for a couple of minutes in some garlic olive oil. Delicious and quick.
I think we’re becoming a meatloaf family!
