Recipe: Greek Green Beans

These were a favorite growing up, but I don’t get to make them much because Josh isn’t a fan. Not sure exactly why they are called Greek Green Beans,

maybe the oregano or just the fact that the recipe came from a Greek cookbook…who knows!

Anyway, they are super easy, a great use for fresh green beans, and perfect as a potluck dish.

  • 1lb fresh green beans
  • 1 can diced tomatoes
  • 1 TBSP tomato paste
  • 1/2 an onion, chopped
  • 1 garlic clove diced
  • 3 TBSP olive oil
  • 1/2-1 cup water
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper

Heat olive oil over medium heat, sauté onions and garlic until golden. Stir in remaining ingredients. If beans aren’t covered, then add more water to cover beans. Cover and simmer 45 minutes until beans are tender.

    I’m with Josh…I don’t know if I would like them either. I DO however, love green beans stir fried with a little garlic & black bean sauce. Mmmmmmm! Or just plain with salt & butter.
