Refreshing Tuna Melt
I whipped up this easy tuna melt sandwich tonight for dinner and it was fantastic…even Josh gave this two thumbs up and requested it be added to the supper rotation. Unfortunately, we ate so fast I forgot to get a picture. I think the avocado makes the who sandwich!
- 12oz Albacore Tuna in water
- 3 TBSP light mayo
- 1/8 tsp black pepper
- 4 slices whole wheat bread, toasted
- 4 bacon slices, cooked & halved
- 1/4 avocado, thinly sliced
- 4 slices Swiss Cheese
Preheat oven to 425. Combine first three ingredients in a bowl. Spoon tuna mixture evenly over toasted bread slices. Top tuna mixture evenly with bacon, avocado, and cheese. Place sandwiches on a baking sheet. Bake for 2 minutes or until cheese melts.
