Mexican Wine Dinner

This weekend we had our first 2010 wine dinner with my mom, step-dad, step-brother, and brother. This time I was able to contribute to the meal…I made my delicious beef enchiladas and they were a hit.

We were able to enjoy sangria and appetizers outside and enjoy the beautiful blue sky. One of the favorites of the night were these flavor loaded nachos. Shredded chicken, scallion, avocado, tomato, and cheese on top of a blue corn chip topped with lime/cilantro sour cream. We’ll definitely be making those again.

The food and wine were delicious, but we all agreed that the Mexican theme just does not work with wine. The food was amazing, but more fitting with beer and margaritas!

One person was very missed at our dinner…Mr. Davies! Hopefully he can make the next one and maybe at the new Oswald homestead. I wonder what the next theme should be?!
