Meatless Monday’s September 1, 2008

I just learned about the Meatless Monday health campaign over the weekend.  It is a national campaign to help prevent diabetes, heart disease, stroke, and cancer.  The goal is to help reduce the consumption of saturated fats by 15%, which is about one day’s consumption per week…Voila, Meatless Monday!  The campaign has a very informative website with recipes, articles, a newsletter, and links to resources.  It’s not necessarily about eating vegetarian, but about decreasing your consumption of red meat, poultry, and high fat dairy and also trying to incorporate seafood high in omega-3 fatty acids.

I look forward to starting Meatless Monday in our house in an effort to keep us healthier and maybe in helping to lose those last few bothersome pounds.  I have a few meatless and seafood dishes that are currently in my recipe rotation, but I’m excited to branch out and try a few new recipes (outside of pasta all the time) and also seafood that I don’t normally buy.  One of my favorite summer meatless dishes is a vegetarian taco salad with crushed fritos, dark leaf lettuce, black beans, and all the other taco fixins!  Josh’s favorite is farfalle pasta with cremini mushrooms, asparagus and marscarpone cheese.
